Potassium Benzoate is the potassium salt of benzoic acid. It corresponds to the chemical formula C7H5KO2 and occurs naturally in cranberries although commercial grades are obtained through the synthesis of benzoic acid and potassium hydroxide. Potassium benzoate is supplied as a white, odourless or nearly odourless crystalline powder.
