Malic Acid is Hydroxybutanedioc acid, a naturally occurring dicarboxylic acid having the molecular formula C4H6O5. It is responsible for the sour taste of fruits. Malic acid has two stereoisomeric forms (L- and D-enantiomers), though only the L-isomer exists naturally. The commercial material is obtained synthetically, and is supplied as a white, or nearly white, crystalline powder or granules, with a slight odour and strong acidic taste.
