Guar Gum is a hydrocolloid (gum) obtained from guar beans (Cyamopsis tetragonolobus). It consists chiefly of a high-molecular-weight polysaccharide, composed of the sugars, D-galactose and D-mannose. Guar gum occurs as an odourless or nearly odourless, white to yellowish-white powder with a bland taste.
